Ingredients: For the Base: 1 large round slice of watermelon (about 1 inch thick) For the Toppings: 1/2 cup Greek yogurt (plain or vanilla) 1 tablespoon honey (optional, for sweetness) 1/2 cup strawberries, sliced 1/2 cup blueberries 1/2 cup kiwi, peeled and sliced 1/2 cup pineapple chunks 1/4 cup shredded coconut (optional) Fresh mint leaves for garnish Instructions: 1. Prepare the Watermelon Base: Cut a large, round slice from the middle of the watermelon, about 1 inch thick. This will serve as the "pizza" base. Place the watermelon slice on a large cutting board or serving platter. 2. Mix the Yogurt Topping: In a small bowl, mix the Greek yogurt with honey if using, to add a touch of sweetness. Spread the yogurt evenly over the watermelon slice, leaving a small border around the edges to resemble a pizza crust. 3. Add the Fruit Toppings: Arrange the sliced strawberries, blueberries, kiwi, and pineapple chunks on top of the yogurt layer. Sprinkle the shredded coconut over the top if using. 4. Garnish and Serve: Garnish with fresh mint leaves for a pop of color and extra freshness. Using a sharp knife, cut the watermelon pizza into wedges, just like a regular pizza. Serve immediately for a refreshing and healthy summer treat! Optional Variations: You can use other fruits like raspberries, blackberries, peaches, or mangoes depending on your kids' preferences and seasonal availability.
